Aberystwyth University offers Knowledge Economy Skills Scholarships (KESS) for research project entitled: Strategies for enhancing the shelf-life of meat for consumers – the role of antioxidants. This KESS MPhil Scholarship is funded by European Social Fund administered by the Welsh Government. KESS Scholarship holders do not pay fees. A stipend of £10,130 is offered and each scholarship has an additional budget for travel, equipment/consumables and training to support applicants research. Application deadline is March 22, 2013.

Study Subject(s): Scholarships are offered for research project entitled:  Strategies for enhancing the shelf-life of meat for consumers – the role of antioxidants. Two areas of study will be developed in the research: (1) The project will examine a range of factors influencing the antioxidant content of forages (including species, wilting, ensiling, additives). (2) The project will assess the degree of variation in the antioxidant content of Celtic Pride beef and establish relationships between animal diet and antioxidants in beef. These measurements will provide important baseline information on antioxidant content of Celtic Pride beef and will assist in development of protocols to further enhance and reduce degree of variability in the antioxidant content of beef.

Eligibility: The prospective applicant should have a minimum of a 1st or good 2:1 in a relevant degree, and be available to take up the studentship by June or July 2013. The prospective applicant should also not hold or currently be working towards a qualification at Master’s Degree level or higher. Applicant must also be a resident, upon application, in the Convergence Area of Wales and he/she must be able to take paid employment in the Convergence area on completion of the scholarship.

Scholarship Description: Aberystwyth University is seeking to recruit a 1-year full time MPhil to work on a project entitled: Aberystwyth UniversityStrategies for enhancing the shelf-life of meat for consumers – the role of antioxidants. Improving shelf life and maintaining fresh colour of meat is important for consumers and also is an important determinant of “waste” in the red meat sector. Maintaining colour shelf life and reducing waste in red meat is the focus of this project. The overall objective is to investigate key factors influencing the antioxidants in forage and delivery through to beef (using Celtic Pride Beef as the model). The industry partner, Wynnstay Ltd, are involved with the Celtic Pride Beef scheme in Wales, which is a unique supply chain initiative to produce a premium beef product for Wales. Two areas of study will be developed in the research: 1.
